Aunt Frans Holiday Swedish Meatballs

This is the most requested appetizer at our annual holiday cocktail party.

INGREDIENTS

1 lb ground beef

1 can beef boullion soup

1/3 C. plain breadcrumbs

2 tbsp. grated onion

1/8 tsp. pepper

1/2 tsp. salt

2 tbsp. butter

4 oz. canned mushroom stems and pieces, drained

1 tbsp. flour

2 tbsp. chopped parsley

1/2 pint heavy cream

DIRECTIONS

Mix 2/3 can of boullion soup into ground beef. Add the grated onion, 1/8 tsp. pepper and 1/2 tsp salt and mix well. Shape beef mixture into cocktail size meatballs.

Melt 2 tbsp butter in non-stick fry pan. Cook meatballs until browned on all sides. Remove the meatballs and place into a dish. Add the mushrooms into the fry pan and stir to remove the bits and pieces from the fried meatballs. Combine the flour with the remaining boullion soup and pour over the mushrooms. Slowly add the cream and bring to a simmmer. Add the meatballs to the cream mixture and cook, covered, for two minutes. Add the chopped parsley and serve in a chafing dish.
